Manual harvest into 12 kg boxes. At the winery, the grapes were once again meticulosly triaged on a vibrating sorting table, before being fully destemmed and lightly crushed. The free run juice was cold settled. Fermentation took place at a controlled temperature of 15ºC, for 19 days. Ageing in the bottle for three months.

Pale salmon colour. Exuberant primary aromas and floral notes. Nice freshness and minerality.
